Bacon Pecan Shortbread

Nothing says "southern" like bacon! So why not do some Baking with Bacon.

Southern Sisters,

I have the most mouth watering recipe for you………. well, it's the next best thing to... I don't know shopping!! This recipe comes from the new 2014 Christmas with Southern Living book. I'm already thinking of what new recipes I'm gonna dish up during the holidays!

First things first-you must fry up some bacon. DO NOT use bacon bits! That's just not right in the south! You want nice fresh salty bacon fried to be crispy so you can crumble in the dough.

Here's the recipe:

1 cup butter-softened (2 sticks)
3/4 cup powdered sugar
1/4 cup granulated sugar
1/2 tsp. vanilla extract
2 cups all purpose flour
1/3 cup cornstarch
1/4 tsp. salt
8 cooked bacon slices-crumbled
1 cup chopped pecans-toasted
Maple glaze

1. Preheat oven to 350. Line the bottom and sides of a 13X9 pan with aluminum foil, allowing 2 to 3 inches to extend over the sides, lightly grease foil.
2. Beat butter and sugars altogether until light and fluffy. Beat in vanilla.
3. Whisk together flour, cornstarch and salt; add to butter mixture and beat dough just comes together. Gently stir in crumbled bacon and pecans. Press dough evenly into prepared pan. Refrigerate for 10 minutes or until firm.
4. bake at 350 for 25-30 minutes until golden brown. Cool completely on a wire rack-about an hour. Lift shortbread from pan, using foil sides as handles. gently remove foil, and cut shortbread into 24 rectangles. Drizzle with maple glaze.

Maple Glaze
Whisk together 1 1/4 cup powdered sugar, 1 tsp. maple extract or maple syrup and 1 1/2 TBSP. milk until smooth, adding additional milk for desired consistency.

You can certainly substitute any of the above ingredients for healthy choices-but ladies this is not a healthy recipe-sorry!
